Citrusy Ahi Tuna Crudo

Ingredients (serves 4)

Salt bae who.

1/2 lb sushi-grade ahi tuna 

1 hot pepper (preferably serrano)

1 orange (juiced)

1 lemon (juiced)

1 lime (juiced) 

1 knob of fresh ginger 

Scallions (for garnish)

Salt (preferably flaky, for garnish)

Microgreens (optional, for garnish)

How to do it 

1). Prepare citrusy sauce 

In a container or bowl, combine the juices of 1 orange, 1 lemon and 1 lime. To the same bowl, add about 1 tbsp of fresh ginger (I recommend using a microplane). Finish with a tiny pinch of salt. 

2). Slice your hot peppers of choice, thinly. 

Avoid the seeds, but a few won’t hurt. 


3). Thinly slice your sushi-grade tuna into desired pieces (
sashimi style). 

4). Plate.

Place your thinly sliced tuna onto a plate of your choosing. Pour the ginger-citrus mixture between the pieces so it covers the entirety of the plate (feel free to pour directly over the tuna as well so it covers both sides, if that's what you prefer). 

5). Garnish. 

Place 1 thinly sliced piece of hot pepper on each piece of tuna. For some extra flare (but not necessary at all), throw some microgreens on there. 

Who needs Nobu?! Enjoy!
