Spicy Harissa Carrots with Honey & Herbs
Ingredients (serves 2-4)
1 bag of carrots (around 1lb)
Harissa paste (1 - 2 tbsp)
Salt and pepper (to taste)
Honey (for garnish)
Fresh herbs (mint, dill, parsley or cilantro, for garnish)
For the yogurt sauce:
1 cup full-fat greek yogurt
1 bunch of mint, chopped
2-3 tbsp lemon juice
1 clove of grated (or minced) garlic
Salt (to taste)
How to do it
1). Preheat oven to 400 degrees.
Place a baking sheet with aluminum foil inside of the preheating oven while you do the rest.
2). Prepare carrots.
Wash, dry and peel carrots. Cut them into desired shape, preferably long-ways to create 6-inch pieces. Place them into a bowl with olive oil, salt and harissa paste.
Remove baking sheet from oven and spread carrots evenly, cut side facing down. Cook for about 20 minutes.
3). Make the yogurt sauce.
Combine yogurt, lemon, mint, garlic and salt in a bowl and chill until ready to serve.
4). Plate & serve.
Once carrots are finished cooking, remove from the oven. On a dish of your choice, spread a layer of the yogurt sauce across the dish. Place the carrots on top of the yogurt mixture, drizzle with honey and garnish with fresh herbs.
